Joel Lepe brings more than 15 years of experience shaped by some of the most refined kitchens in the country. Trained at Le Cordon Bleu and having held leadership roles at the Waldorf Astoria Orlando and Isleworth Golf and Country Club, his background blends fine dining precision with the pace and discipline of high-volume service. At Casa Luna, his cooking draws from Spanish tradition and seasonal ingredients, elevated through modern technique and thoughtful restraint. Each dish is crafted with intention, balance, and care, inviting guests to slow down, share, and savor an experience that feels warm, elevated, and memorable.
